What are SHUs?
SHU is the acronym for Scoville Heat Units. This is the tool for measuring the pungency (heat) and amount of capsaicin (the chemical compound that causes the spicy heat) of all chili peppers. For reference; Frank’s Red Hot Sauce Original is 450 SHU.
Why don’t you have my favorite hot sauce in stock?
Brutal uses only Okanagan-grown peppers for their hot sauces, so because they are seasonal and the supply can vary, our stock often reflects this. We are proud to say that we are the only retailer of these sauces other than Brutal themselves!
How long will they last?
They don’t have a shelf-life, although it is recommended to consume them within a year as any kind of contamination can change this.
Do they need to be refrigerated?
All* of Brutal’s hot sauces are shelf-stable due to the optimal salt content, pH level, and naturally occurring preservatives from the fermentation process; however, refrigeration is recommended.
*Shishito is the only exception as it is a no-heat sauce, therefore it is not shelf-stable and oxidizes faster.
